Miso Glazed Salmon Tray Bake

If you know me, you’ll know that I’m a bit obsessed with salmon. This beautiful Miso Glazed Salmon Tray Bake is an easy salmon recipe for spring. My recipe serves 4 but is easy to adapt to 1 or 6 portions if needed.

Miso Glazed Salmon Tray Bake

Difficulty: Easy | Serves 4

INGREDIENTS
2 Tbsp white miso paste
2 Tbsp sake
1 Tbsp brown sugar
1 Tbsp soy sauce
4 salmon fillets (120g to 180g each)
500 grams new potatoes, halved
2 red onions, cut into wedges
1 large capsicum, deseeded and cut into thick strips
1 Tbsp dried thyme
3 Tbsp extra virgin olive oil
Salt and pepper
3 courgettes, cut into thick rounds
1 bunch asparagus, woody ends removed
1 Tbsp sesame seeds
1 spring onion, thinly sliced
 
PREPARATION

  1. Preheat oven to 200°C.
  2. Place the potatoes, red onion, capsicum, and thyme into a roasting tray. Drizzle with extra virgin olive oil and season with salt and pepper. Mix to combine. Bake in a 200°C oven for 30 minutes.
  3. In a bowl or container, whisk together the miso paste, sake, brown sugar and soy sauce until smooth. Add the salmon fillets and toss to coat well. Reserve.
  4. Remove tray from the oven and add courgettes and asparagus. Mix to combine. Arrange the salmon on the tray, brush with extra sauce and sprinkle with sesame seeds.
  5. Return tray to oven and bake for 15 minutes at 200°C. Top salmon with spring onion and serve immediately.
