This beautiful dessert is perfect for your Easter feasting. A play on bread and butter pudding, I added berries to give this rich pudding some bursts of brightness. Serve with yoghurt or ice cream. Hot Cross Bun Pudding with Berry Yoghurt Custard 30 mins prep | 20 mins cookDifficulty: Easy | Serves 6 INGREDIENTS1 cup berry yoghurt1 cup full cream½ cup soft brown sugar4 egg yolks1 tablespoon cornflour1 teaspoon vanilla extract1 teaspoon butter, softened6 hot cross buns½ cup chocolate buttons/drops or mini Easter eggs1 cup frozen mixed berries1 tablespoon icing sugar for dusting PREPARATION 1. Preheat oven to 180°C. 2. Take a jug or bowl and add berry yoghurt, cream, soft brown sugar, egg yolks, cornflour and vanilla extract. Beat until smooth. Reserve. 3. Tofu Tuesday: Hot Cross Bunny

From the archives: Like most bunnies, Tofu has a sweet tooth and adores raisins and bread. Neither are good for rabbits but can be viewed as occasional treats. Tofu goes crazy for hot cross buns and a single bun can transform this usually mild-mannered lagomorph into a common thief. One Easter, I left a plastic-wrapped hot cross bun in my handbag which was on a chair near our front door. The next morning, half the bun was found under our bed in our bedroom. Tofu had sniffed out the bun, foraged for it in my bag and carried his trophy to the bedroom to enjoy. Over the weekend, I visited Parnell Farmers Market and purchased a couple of these giant hot cross buns from Pukeko Bakery. They were delicious! These buns were much better than the buns we bought from a local cafe/bakery after reading a glowing review by a popular website. We paid $16 on 6 cafe buns! Hot Cross Buns with Custard and Cognac

  I’m not much of a baker so we feast on store-bought hot cross buns every Easter. No shame. If you’re itching for something a little fancy this Easter, I recommend trying this version of bread and butter pudding. This recipe serves six adults (or two giant gluttons with regret). Bread & Butter Pudding Hot Cross Buns with Custard and Cognac (adapted from jamieoliver.com) Serves 6 Ingredients 2 cups milk 2 cups cream 1 vanilla pod or 1/4 teaspoon vanilla paste 4 eggs 3/4 cups white sugar 6 hot cross buns, cut in half and smeared with butter butter for buns 1 handful of sultanas soaked in 2 tablespoons Cognac overnight 1 tablespoon Cognac Icing sugar for dusting 1-2 cups cream for serving Preparation Pre-heat oven to 170°C / 325°F.
