Crispy roasted duck fat potatoes served with truffle mayo. A little fancy. A lot delicious. Use Agria potatoes for perfect fluffy crunch. Enjoy as a side or all on their own.

Duck Fat Potatoes with Truffle Mayo

INGREDIENTS
½ cup Best Foods Mayonnaise
2 tbs black truffle sauce or black truffle paste
1kg Agria potatoes (medium size)
¼ cup duck fat
2 sprigs rosemary, de-stemmed and leaves picked
Salt and pepper
PREPARATION
- Place the mayonnaise and truffle sauce into a small bowl or jar and stir until combined. Cover tightly with plastic wrap or a lid and refrigerate until required.
- Preheat oven to 220°C.
- Bring a large saucepan of water to the boil. Peel the potatoes and cut in half lengthways and into quarters lengthways so you have chunky chips. Place potatoes into rapid boiling water and boil for 10 minutes.
- Drain potatoes into a colander. Tip potatoes back into the saucepan. Tip back into colander. Repeat back and forth several times to rough up the potato edges, this fluffiness will crisp up nicely when roasting. With the potatoes back in the saucepan, add duck fat and gently stir to coat.
- Tip potatoes into a roasting tray and arrange into a single layer. Season with salt and pepper and scatter with rosemary leaves.
- Roast in a 220°C oven for 45 minutes until golden and crunchy.
- Transfer to a platter and serve with truffle mayo.
