Smokey hummus and roast veggie trumpets (and a giveaway)

My absolute favourite way to consume chickpeas. Who’s with me? I love hummus slathered, spread, dipped or dolloped. I have absolutely eaten hummus with a spoon. Lisa’s is a beloved name in dips and their latest creation is the new Lisa’s Smokey Hummus. Delicately pair Lisa’s Smokey Hummus with the savoury and sweet flavours of roasted vegetables, honey and miso. I’m so pleased with how these turned out. I tested this recipe out on two hungry men who devoured them with glee. Super easy to assemble, hearty and full of flavour, this recipe is sure to be put on rotation at your house. Tofu Tuesday: Tiny Carrot

I made dinner for my parents in the weekend and they sent us home with a bunch of goodies like a bottle of wine, home made bread and home made pate plus 3 tiny carrots for Tofu. So spoilt! Immediately after this photo was taken, Tofu took the carrot between his front teeth and proceeded to frantically run around the room with it in order find the perfect dining spot.

Spiced Carrot & Coconut Soup

With the amount of eating over the last 7 days, I’ve been craving some simple vegetable dishes. I had half a loaf of Blackwoods Bakeries focaccia from the weekend and my parents had just given me a big bag of carrots. What started off as a pauper’s dinner got fancy real quick. Don’t let the carrots full* fool you. This is a rich and satisfying soup. *Edit: Wow, genuine Freudian slip. Spiced Carrot & Coconut Soup Dinner for 2 or a starter for 4. Ingredients 5 carrots 3/4 can coconut cream 3 cups stock (I used chicken but use vegetable if vegetarian) 1 teaspoon green curry paste (check if vegetarian) 1 tablespoon olive oil Sage garnish  *Use vegetable stock if you want to make this vegan or vegetarian Preparation Chop the ends off the carrots and cut into bite sized rounds.
