Land of Milk and Hammy

Milk Last night I saw that local food store Nosh, was offering 2 litre jugs of milk for $2 to raise awareness of high milk prices in New Zealand. We a lot for milk even though we are one of the world’s biggest dairy exporters. $2 litres of milk usually ranges from $3.50 up to $6. Today, the New Zealand Herald reported that Nosh’s February only offer was being extended until the end of 2012 and other chains are now tipped to follow suit. Milk wars on!!! Good on you Nosh for being a pioneer on the price of milk. Nosh are a very small reseller of milk so good on them for taking on the giants. Full article here. Some comments on this is that Nosh will have to increase the price of other items to pay for the drop in the price of milk. A Tasty Hole

Beef osso buco was on special at Nosh this week so I bought a couple of medium sized pieces before I knew exactly what to do with them. Like many odd ball cuts, osso buco can refer to both the cut and the dish. Meaning “bone with a hole”, osso buco is traditionally a braised meat and vegetable dish and there were many variations to be found online. It is pronounced exactly the way it is spelled and I admit, I bought this cut for the marrow. I’ve never cooked marrow before, but if you enjoy eating savoury, rich, fatty, buttery food then you will probably like marrow. I read a few recipes and articles and then did my own interpretation of osso buco. Chinese celery, soy sauce, avocado oil…I can vouch for it’s inauthenticity. Onions, carrots and celery are referred to as mirepoix (pronounced Mer-pwa) in French cooking or “the holy trinity” in Creole. Happy Eats

It’s getting easier and easier to buy free range and fair trade. Less than a year ago, I turned my nose up at spending so much on happy food, but I’m getting to the stage where I can almost skip the prison chicken. This week, I picked up a bunch of happy eats at Nosh. I try to be realistic, so when free range is on special, it’s a good time to stock up and freeze. Turks Free Range Chicken thighs are on special this week for $7.99 per kilo pack. Other stuff I picked up were Freedom Farms pork rump steak $23.99 kg. All Good Fair Trade bananas $4.99 a bunch. I brushed the chicken thighs with a mix of honey, soy sauce and a good squeeze of lemon. Then baked for 1 hour at 180°C alongside a tray of kumara and a bulb of garlic. Turn up the oven in the last 15 minutes to get a crispy skin. Serve with beans. Super easy. In the past, I always thought that free range were a …

Special Salmon

I love when salmon fillets are on special at Nosh. I buy salmon when it is on special so it’s good that it seems to happen fairly regularly. To keep each fillet in one piece, I fry it on the skin side only. It gets a little steam session so that the top and inside gets cooked too. Teriyaki Salmon Fillet Ingredients (for one portion) 1 salmon fillet 1 tablespoon teriyaki sauce A tiny bit if oil for the pan Salt (optional) Preparation Brush the fillet with the teriyaki sauce and marinade for an hour or so. Add oil to a hot pan, carefully lay the fillet skin side down and sprinkle with sault. Fry for several minutes. You should see the cooked colour (less bright) of the fish rise up the side. When it reaches the top, Add up to half a cup of water to the pan and cover. Allow steam to cook fish through (about 10 minutes depending the thickness of your fish). Cook Duck (thanks to Nosh)

Singing songs like “The Man I Love” or “Porgy” is no more work than sitting down and eating Chinese roast duck, and I love roast duck. – Billie Holiday As much as I adore duck, I have never cooked it. Until now. When I saw Nosh’s recipe for duck this week, I knew that I had to make it. Absolutely had to. With a title like Sticky Cherry Duck legs with Parsnip Mash and Roast Fennel, I didn’t stand a chance. They even listed Nipple Hill Pinot Noir for the marinade. Cherries, duck legs and nipples. I love Nosh and Lamb Shanks

Nosh Food Market opened up this year within walking distance of our house. The time it takes to walk from my house to Nosh and back home, including shopping is exactly 1 hour. I adore Nosh, it’s like my happy place. The staff are knowledgeable and seem genuinely happy to be there. Anything on special at Nosh is better quality and cheaper than the supermarket giants. I’m glad I have a restriction on how much I can buy at Nosh or I’d be spending all my wages there. Anything that I can’t carry in my shopping bag doesn’t get to come home with me. Nosh always seem to have lamb shanks on special and they also have great recipes for their products on their website.
