Beetroot

It’s a relief when you remember the reason why you have scarlet poop.

I loved the 7 baby beetroot we received last week in our CSA box. The colour was glorious and the flavour intensely sweet after cooking. I grated a couple of beetroot with carrot for a balsamic vinegar salad and roasted them chicken and again for a roast vegetable pasta. Roasted beetroot is by far my favourite way of eating beetroot but I almost had kittens the next day! Consider this a public health warning.

    I’m with ya’. WIsh I”d read your public health warning prior to my first time eating fresh roasted beetroot and having had kittens the next morning! I “thought” for a minute and then realized what was rally going on – what a relief! Funny…

    LOL, I was used to the coloured pooh but the other day I was peeing red and it took me a moment to realize it was beets.

    HAHAHAHAHAHAHAHAHA! When I read this, I just guffawed. Thankfully, there was no one around to hear my. Well, actually, my neighbors might have heard me 😉

    My cousin was once obsessed with color-changing Kool-Aid. This was back in the late 80’s, early 90’s. He said that not only did it change color on the way in, it also changed the color of everything on the way out. I like to remind him of this now that he is 40!

    Been there, done that. Not pretty. Plus really bad for the blood pressure!

      Having kittens is bad for blood pressure, but at least eating beetroot is good for blood pressure. I guess it all balances out.

    The word escapes me at the moment but it has a name like beeturia or something.
