Getting back on track menu

Results I had a blood test on Saturday and the results weren’t so flash. I hadn’t been feeling quite normal lately and I should have guessed that I was back to being hyperthyroidic. My last few blood tests had been great so this setback feels like a slap in the face. The pendulum swings both ways, so let’s hope it swings back in my favour with adjusted meds and diet. I haven’t done a menu plan for a few weeks and as a result, maybe I’ve been slacking off on my self-imposed diet. There is controversy about diet and auto-immune diseases. My endocrinologist (frustratingly) says diet has no influence on my condition. But I think eating better makes sense and surely it cannot hurt. I guess being able to control at least one aspect of my life helps. Diet I’m going mostly gluten-free and eating lots of whole foods. Proteins, vegetables, dairy are up. More juicing. Minimal alcohol and refined sugar. I’ll allow myself 1 glass of wine per week (medicinal purposes) and use honey in my hot drinks. I’m going to invest in a …

Just a quick meal plan

I apologise for the rushed photos this week but as it gets closer to winter, the time between when I arrive home to sunset gets smaller and smaller. Soon there will be no more photos to accompany these posts because I can’t bear to use flash. This week, The Honesty Box delivered: Vegetables 20 mushrooms A bag of baby spinach 1 avocado 5 tomatoes 1 broccoli 2 capsicums 2 carrots 2 potatoes Pungents 1 garlic 1 lemon 2 onions (red and white) 1 spring onion A bag of herbs (rosemary and basil) Fruit 2 pears 4 apples 6 bananas 6 mandarins Here’s a guide to what we’re eating this week: BREAKFAST Omelette with parmesan, basil and tomato Banana smoothie with peanut butter and chia Lemon sugar pancakes Buttery mushrooms with scrambled eggs and grilled tomato and toast Chinese tea eggs LUNCH Kimchi fried rice with egg, tomato, garlic and spring onion Chicken wrap with baby spinach, avocado and lemon yogurt sauce Quinoa salad with roasted carrot, broccoli and toasted sunflower seeds Cheese and tomato toastie …

More mushrooms!

Another lovely box from The Honesty Box this week. It’s inspiring to get this bounty delivered to our door each week. I figure it’s not laziness, it’s making sure there’s plenty of nutritious stuff to eat each week. This is a better variety than I could have picked myself. The Koala and I were both impressed at the thoughtfully paper-bagged mushrooms. They arrived in perfect condition. We had two of them with dinner on the first night. Seasonal things come in fours, apparently: 4 portobello mushrooms 4 tamarillo 4 feijoa Delighted with yet another avocado. These things are having a long season this year and these tomatoes are still as good as in summer. Still, I’m finally carrying a jacket most days so soup weather is upon us. Here’s a guide to what we’re eating this week: BREAKFAST Porridge with sliced banana, chia and maple Fejioa and banana muffins and a steaming mug of tea Breakfast burrito with beans, scrambled egg, mushroom and guacamole Banana yogurt smoothie Turmeric and herb tomatoes on toast   LUNCH Chickpea, tomato …

Goodbye April, Hello Meal Plan

The Honesty Box delivers again! We’re most excited about the two tamarillo and two portobello. The Koala ate a tamarillo (ahem, his tamarillo) immediately after I took this photo. Quite likely, he’ start eyeing up my tamarillo and I’ll either split it with him or let him have it. I am an older sister and he is a younger brother and it was like that in both our families. The Koala’s big brother and I would save and The Koala and my little sister would feast. Then start eyeing up their older sibling’s uneaten bounty. Was it like that in your family? Tamarillo are still a like bit finger guts to me, but I admit the intense savoury flavour is exciting and unique. They’re still too rare for me to to cook with but I’ll work up to that when the novelty wears off. Feijoa season is intense and short here in Auckland. Our landlord had our feijoa tree removed (for reasons that baffle me). So we’re grateful for any feijoa that come our way. For those …

A Healthier Meal Plan

We are getting this The Honesty Box delivered every week now. For $39.40 including delivery to Auckland central, our F&V small is 8kg (sometimes 10kg) of fresh fruit and vegetables. Shared between The Koala and I, this needs careful planning to eat everything before the next box arrives. I’ve been testing out gluten-free recipes and I think avoiding processed food is good practice regardless of my health concerns. I’m seeing an Endocrinologist (for the first time) today and hopefully there will be time to discuss diet and Graves Disease with him. I’m fairly adamant at this stage I want to try medication and diet only before than permanent options like surgery or radiation. If possible, I’d like to stay away from radiation. It’s starting to get cooler but since we’re still receiving salad ingredients, we shall eat salad this week. Here’s a guide to what we’re eating this week: BREAKFAST Avocado and tomato on toast Banana and peanut butter smoothie Cumin hash brown with a fried egg and grilled tomatoes Fruit and vege juice and soft boiled eggs Rice noodle soup …

Slim pickings meal plan

September and Spring It’s officially spring here in New Zealand. The weather is painfully gorgeous though the air is still chilly. It feels like autumn (fall) which is my favourite time of year. Auckland is known for her bi-polar schizo weather so I doubt it will last. The start of the month also means a new edition of the monthly event Our Growing Edge. Please head over to here and here to it check it out. If you have a blog and enjoy trying new things in the kitchen, it’s a chance to share and celebrate your successes (and failures). It’s been one of those uncertain weeks in terms of eating as we had family come to stay so ate out a few times and had some a meals at home. We went grocery shopping without any idea what we were going to eat so now we’ve got to make something out of a bunch of seemingly random ingredients. No produce box delivery this week. I made pulled pork (again) over the weekend so we’re …

The Honest Box Menu 1

Since the success of my first pulled pork, I’m doing another twice the size this week with plenty of leftovers to play with. The Koala does not mind one bit! This week we received a whole pumpkin from our F&V small box from The Honesty Box. Sharing a 2.4kg pumpkin between two means  it features heavily in this week’s menu. I’m not a fan of pumpkin but I know what I like and as long as it’s cooked with plenty of aromatic spices I’m good to go. The pouch of herbs will be thrown willy nilly into soups and stews. The Honesty Box Menu 1 Items in bold are from The Honesty Box. Orange pulled pork with smashed garlic, onion and bay leaves Pulled pork rolls with lettuce, red onion and sour cream Pulled Pork Tortillas (see notes below) Rice noodles with pulled pork and broccoli Spiced Pumpkin and kumara soup with smoked cheddar toasties Pumpkin and chickpea curry with garlic, onion and tomato paste. Served on rice with a dollop of sour cream Sirloin steak medium rare …

NATURALLY ORGANIC MENU 3

We didn’t receive a lot of vegetables in our Naturally Organic this week so our meal plan reflects this. Hope to stretch a few meals so we can have leftovers for lunch but it might not happen. Plenty of fruit to snack on this week though! Naturally Organic Menu 3 Items in bold are from our Naturally Organic box. Hoisin pulled pork with apple slaw on floury baps (pictured) Chicken and leek soup with garlic butter toast Bangers and mash with kiwi caramalised onions (see recipe below) with sautéed garlic silverbeet Spicy udon with beef, onion, egg and cabbage, topped with pinenuts Pumpkin and silverbeet curry with home made roti Orange roasted chicken drumsticks with pumpkin and carrot Apple hand pies with butterscotch sauce and ice cream Butterscotch and banana smoothie I’d like to share a quickie recipe with you that I whip out for bangers and mash occasions. Call it a lazyman’s chutney. It’s chunky and delicious. The flavours of caramalised onion, kiwi and butter work really well together and this would be great with steak, sausages, chops or chicken. This …

Naturally Organic Menu 2

We had one of those weekends where you divide up your day into two-hour slots so you can get everything done. I attended Creative Mornings last Friday and witnessed the entertaining magic of Otis and Sarah Frizzell’s taco truck adventure. Inspirational stuff. When you look upon their setbacks, I think most sane people would have quit long ago. I learned that sheep scrotums taste like bacon. Considering how many sheep we have in this country, perhaps this is a largely untapped market? On Saturday The Koala and I happened to chance upon The Lucky Taco in Ponsonby so we shared four tacos and their flagship rice milk drink. I tried not to fan-girl too hard, I popped my head in the side door and maybe I gushed. Hopefully, Sarah and Otis were too busy to notice. I met up with my friend Vanessa to help her set up a blog and she sent me home with a gang of lemons from her tree. I’m super excited this week to play with the lovely delivery from …

OOOOBY Box 10 and our “Old Girl”

We bought our Frigidaire when we first moved from an inner city apartment to the ‘burbs. I got her off Trademe for a song, second, maybe even third or fourth hand and we immediately had her resealed by a pro. This fridge-freezer has moved house with us four times and we reckon she could be from the 1970s, making her older than me. Our old girl had a freak out over the weekend. I wish I had before and after photos to show you, as the stalactites were amazing. We shifted her a few inches to the right and I don’t know if that had anything to do with it, but the top third of the freezer turned into an ice cube with icicles as thick as my wrist. Ice expands and within hours it got so bad that we couldn’t close the freezer door. The Koala came to the rescue, carefully using a hammer as an ice pick and excavated the ice from the top shelf and around the seals. I’m now trying to use up everything in …

OOOOBY Box 8

Yesterday I came home to not one but two boxes from OOOOBY. I guess our three add ons this week meant that 1 box wasn’t quite enough for everything. Good thing I returned 3 boxes today. To send your delivery boxes back, all you have to do is leave your empty boxes out. When your box is delivered, they will take back any empty boxes to be reused. I have a bunch of fruit and one kumara left over from last week. Our lemon tree is in full fruit and I made a yummy lemonade over the weekend. Might have to make another batch this week. This week our CSA box included: Vegetable 1 Broccoli 20 Mushrooms A huge bunch of Spinach 4 Spring Onion A bunch of Coriander Fruit 5 Pink Lady Apples 9 Green Kiwifruit 2 Grapefruit Add Ons All Good Bananas Apple Juice 2L Wild Wheat Ciabatta The most interesting thing in the box: Grapefruit. The Koala isn’t keen. What am I going to do with it? Welcome to ideas! Coriander. I …

OOOOBY Box 7 and an Asian influenced menu

Last week’s cafe menu with burgers, pasta, french toast, burritos, fish and chips and pizza exploded in The Koala’s comfort zone, but I prefer to eat more asian influenced meals. This week we received bok choy and lime which will be great for an asian inspired menu. As a good Chinese girl, even living in New Zealand, I grew up eating rice once, even twice a day. This week our CSA box included: Vegetables 3 Red Kumara (Certified Organic) 1 Baby Cos (Self Certified Organic) 2 Bok Choy (Self Certified Organic) 1 Cauliflower (Conventional Sprays) 4 Carrots (Conventional Sprays) Fruit 9 Gold Kiwifruit (Certified Organic) 2 Limes (Self Certified Organic) 3 Navel Oranges (Self Certified Organic) 2 Apples Newstead Gold (Conventional Sprays) Add Ons 1 loaf Wild Wheat Ciabatta 2 litres pure Apple juice The most interesting thing in the box: Bok choy and limes. Menu 7 Asian style chicken broth with carrots*, onion, ginger and rice Korean BBQ Beef (Bulgogi) with baby cos*, korean noodle salad (japchae), kimchi and rice Wonton soup (pork mince, chives and scallops) with bok choy* Honey lime* chicken and cauliflower with toasted …

OOOOBY Box Week 6. Cafe Menu

Cafes can be found all over New Zealand and they all serve similar menus with their own twist. New Zealand cafe culture is HUGE. We take our coffee espresso very seriously and while restaurants are reserved for special occasions, people go to cafes for no real reason but to eat. The casual, informal style of dining appeals to our kiwi mentality. This week, cooking at home with our CSA box, we’re having grilled haloumi, french toast, salad, burgers, quesadillas a pasta dish, a soup and even a smoothie. Very much inspired by a stock standard cafe board. This week our CSA box included: Vegetable Garlic  (Self Certified Organic) Pumpkin (Certified Organic) Avocado (Certified Organic) Fancy Lettuce  (Self Certified Organic) Fennel (Certified Organic) Broccoli (Conventional Sprays) Fruit Pink Lady Apples (Conventional Sprays) Green Kiwifruit (Certified Organic) Mandarins (Conventional Sprays) Add Ons 1 loaf Wild Wheat Ciabatta 2 litres pure Apple juice All Good Fair Trade Bananas The most interesting thing in the box: Fennel. I’ve cooked it a couple times and while I don’t usually like aniseed, I do like fennel. I like the idea of …

This Week’s Specials – Week 5

I’m having fun writing a weekly menu and we generally stick to the plan.  I admit I may be a bit ambitious when writing it. I also don’t think it helps to write a meal plan on an empty stomach! I came home with a few yummy things from The Food Show including 2kg of Southland Queen Scallops and 4 kinds of cheese! Still, this week, our pantry reserves are getting low and we haven’t been to the supermarket in a while so we’ll have to pick up a few things. This week our CSA box included: Vegetable Mushrooms Spinach Carrots Cauliflower Broccoli Fruit Newstead Gold Apples Gold Kiwifruit Winter Nelis Pears Mandarins …and a loaf of ciabatta. Meal Plan Week 5 Cauliflower*and potato* soup topped with with bacon and sour cream. Served with ciabatta* garlic* toast Individual cottage pies with carrots*, peas and mushrooms*, topped with cheesy golden mash Queen scallops and spinach* pasta, tossed with butter and served with grated Parmigiano-Reggiano and a lemon* wedge Cheese fondue with ciabatta*, baguette, carrot, broccoli and tortellini Chocolate …

OOOOBY Box Week 5

We are now in week 5 of our weekly CSA deliveries from local company OOOOBY. All three of us look forward to OOOOBY Tuesdays and the cute name probably doesn’t hurt. This week included lemons and potatoes which are on our “do not want” list so we didn’t receive them. We don’t want potatoes and lemons not because we don’t like them, but because we do. Rather than praying for potatoes each week, we buy them in bulk so that there is always a sack to be used. Our lemon tree is giving us delicious, juicy lemons this winter so no need to have those delivered either. This week our CSA box included: Vegetable 8 Mushrooms (Conventional Sprays) 1 giant bunch of Spinach (Self Certified Organic) 6 Carrots (Conventional Sprays) 1/2 a head of Cauliflower (Conventional Sprays) 1 Broccoli Fruit 7 Newstead Gold Apples (Conventional Sprays) 11 Gold Kiwifruit (Certified Organic) 6 Winter Nelis Pears (Certified Organic) 6 Mandarins The most interesting thing in the box: Mushrooms. Not that they are strange, but because this is the first time we’ve seen mushrooms …

Meal Plan Week 4

I never was a weekly meal planner, but I guess it was only a matter of time. I am a obsessive list maker. I bet there is loads of psychology on list makers. I’m sure they have merit. I feel a kindred spirit in other obsessive list makers. Over the last month of CSA boxes, meal plans have helped us get through our produce. Without a plan, every meal would feel like a quickfire challenge from Top Chef. This is my fourth meal plan and serves mostly as a guide. Meal plan week 4 Honey-soy-lemon roast chicken drums, kumara and potatoes* with garlicky* pan-fried silverbeet* and buttered peas Stir fry beef with cabbage*, garlic*, broccoli*, onion and udon noodles Lamb sausages with cabbage* and mandarin* slaw, baked potatoes with sour cream Deviled pork sausages with and pink lady apple* on kumara* mash, served with a side of steamed broccoli “Whatever is left” vegetable soup with toasted cheese ciabatta Bacon and avocado* pasta topped with shaved vintage cheddar Avocado* on toasted ciabatta* Fruit and yoghurt Banana*, …
